Imagine blowing bubbles into liquid with a straw. The more you blow, the more bubbles you get. Mentos candies are a bit like straws: they're covered with tiny bumps and holes that help lots of bubbles form quickly. The fizz you see is carbon dioxide gas escaping really fast from the soda.
